Sweet potato hash, eggs over hard & tomato, cilantro, green onion pico.
For sweet potato hash I grate the sweet potatoes in a food processor (usually 3 or 4 large ones for the week). I store in an airtight container in the fridge. To cook: sauteé with a bit of avocado oil and sea salt and pepper.
For pico, chunky chop tomatoes, cilantro, and green onion. Simple and easy!
